Catsup Confessions

I have a problem.

It goes way, way back to my childhood. My Dad loved to experiment in the kitchen. One day, he saw one of those five-minute segments with a cooking demo at the tail end of the news. Within minutes, he was cooking up something that I would, years later, be recreating it from memory in my own kitchen, on a regular basis. Here's the recipe:  soak chicken pieces in buttermilk (or 1 cup whole milk + 1 Tablespoon vinegar), dip in a blend of spices, parmesan cheese (the powdery kind), and flour. Fry in a cast iron skillet. It is the best.fried.chicken.ever.

Getting back to my problem:  you see, I’m a closeted fried chicken + catsup consumer. Now, I wouldn’t do anything crazy like dip a seasoned, broiled, otherwise healthy chicken breast in catsup, that would be really off the wall.

Nope, it’s all about that fresh-from-the-fryer breading and the juicy, plump (preferably dark) meat underneath. It screams at me, “I NEED CATSUP!”. Being an eternal pleaser, I must surrender to the poultry. To me, fried chicken + catsup go together like wine + cheese, chocolate + peanut butter, salsa + chips. You get the idea.

This peculiar pairing has caused friends and family alike to turn away from me in utter disgust, so I learned to eat my fried chicken and catsup only in the privacy of my home, alone. Preferably while wearing sweatpants and my hair in a messy bun.
